Chicken lettuce wraps

I cannot stick to a healthy diet when I am on vacation. Though all the meals are well balanced, I just tend to eat multiple meals a day. All those home made delicacies make me out of control..
And once I am back from vacation I feel so heavy and feel like eating something really light. That is when I came across this wrap recipe. Unlike the tortilla / chapatti / kuboos wraps, this wrap is crunchy..It is Lettuce. 
I like to make quick and healthy but also tasty meals. As soon as I saw the recipe, i rushed to the next super market and picked up some fresh lettuce, a bottle of Thai sweet chili sauce and boneless chicken. The original recipe ask to use fish sauce. As I am not a great fan of it, I dint use. And instead of sweet soy sauce, I added sugar and regular soy sauce
Here is the recipe

You need,

  • Refined oil – 2 tbsp
  • Onion – 1 small, finely chopped
  • Garlic – 3 cloves, finely chopped
  • Boneless chicken – 450 gm, cut into tiny cubes
  • cashew nuts – 1/2 cup (dry roasted)
  • Soy sauce – 1 tbsp
  • Sugar – 1/2 tsp
  • fresh coriander leaves – 1 tbsp
  • Lettuce – 10-12 leaves

For sauce you need

  • Thai sweet chili sauce – 3 tbsp
  • Fresh lemon juice – 2 teaspoon
  • fresh coriander leaves – 1 tbsp
  • White sesame seeds – a pinch to garnish

You have to

  • Mix all the ingredients for the Sauce in a small bowl, set aside
  • Clean the lettuce, peel each leaf off the stem, set aside. (Wash and dry well in advance if required)
  • Heat pan on medium heat and add the oil.
  • Add the onion, garlic and stir-fry until onions turn translucent
  • Add the chicken, stir fry till it is cooked well
  • Once the chicken is cooked add in the cashew nuts, sugar, soy sauce and salt
  • Stir well to blend the sauces well and the sauce dries up
  • Add in coriander leaves and remove from flame. Allow to cool down a bit
  • While serving take 2 leaves and keep one on top of other
  • Add 1 tablespoon of the filling onto the middle of   lettuce, and top with some sauce.
  • Wrap it up and eat immediately
