Madhur Vada

Bangalore days!!!!  In most of the weekends me and my friends visit commercial street for window shopping. As many of you know this place is famous shopping street.

There is a woody’s restaurant in that street and i try to visit this place most of the time.. And one dish i keep on buying every time is madhur vada.. That big flat crispy crust and that inner flakes is so delicious and it tastes so good with the coconut chutney they serve…And once you have it, you cant resist the smell and taste. It is that good…

This is my attempt to try that delicious treat, and it is so easy to prepare….

You need

  • Rice flour – 1 cup
  • semolina – 1/3 cup roasted for 5 minutes and cooled down to room temperature
  • All purpose flour – 1/4 cup
  • Green chillies – 2 finely chopped
  • Onions – 1 medium finely chopped
  • Red chili powder – 1/2 tsp
  • Curry leaves – 5 to 6 leaves finely chopped
  • Hing/asofoetida powder – a tiny pinch
  • White Sesame seeds – 1 tbsp
  • Salt to taste
  • Oil – 2 tbsp warm + for deep fry
  • Water – for making the dough

You have to

  • Mix first 10 ingredients in a bowl
  • add 2 tbsp warm oil and rub oil and flour mixture well with your fingers
  • Now slowly add water , knead and make a dough. (First add 1 cup and later 1 tablespoon water in each interval)
  • Divide the dough into 8-10 small ball
  • Oil each dough ball and the surface (you can use a plate) 
  • Press to flatten the dough ball with your fingers to form a flat circle. ( or use a plastic sheet or chapptti press)
  • Repeat the same with rest of the balls
  • Deep fry in medium to flame till golden brown. 
  • Strain and serve with or without a coconut chutney
  • Else store in a air tight box. You can consume in 2-3 days

You can call this an instant vada recipe. Unlike the other Vada, here there is no soaking process.. And so easy to prepare…
