Chilli Prawns

August 28, 2014 By Manjooo M Leave a Comment

What are the minimum spices/ingredients which makes a food, Chinese??

For me the priority goes in this order..soy sauce, ginger, garlic, spring onion, sesame oil, sesame seeds and list goes on…

The first 3 ingredients I always have at home.. Once i get some spring onion I make some Chinese flavored dish… Most of the time it is fried rice (recipe is here)..

I do make chili prawns in a different style (Recipe is here)…This recipe is a different version

For frying the prawns

Prawns, which are shelled de-veined, washed and drained – 12 nos.
Soya sauce 1 teaspoon
lemon juice 1 teaspoon
Salt to taste
Cornflour – 2 tablespoon
Oil for shallow fry – 2 tablespoon

You have to,
Take prawns in a bowl
Add soy sauce, lemon juice, salt and mix well
Take the corn flour in a plate and spread it
Take the prawns one by one and dust the prawns in the corn flour well.
Heat some oil in a small pan and shallow fry the prawns for minute on both sides.
Drain and set aside

For sauce

Ginger – 1 tbsp finely chopped
Garlic – 1 tbsp finely chopped
Red chili flakes – 1 tsp
Spring onions with greens, chopped –  2 nos (chop the green and whites separately and keep aside)
Soy sauce 1 tablespoons
Pepper – 1/2 teaspoon
Green capsicum – 1 medium, cut into cubes
Salt to taste
Oil – 1 tbsp + the remaining oil which we used to fry the prawns
A mixture of 1 tbsp corn flour 3/4 cup of water

You have to

Heat in a wok or a pan
Add ginger, garlic  and stir fry for few seconds in high heat.
Add spring onions whites, capsicum  and continue to stir fry
Add soy sauce, red chili flakes, pepper powder and mix
Add in the prawns, salt and fry well.
Now add in the cornflour mixture and allow to boil. Approx 3-4 minutes
Add the spring onions green and stir fry
Serve hot

We like to have with chappati
