Kerala style lamb stir fry / Kerala mutton peralan

This is a very tasty mutton preparation. I have tried this several times and it is always a hit.

You need,

  • Mutton – 1 kg, cubed cleaned, washed and drained very well. 

For Marination,

  • Turmeric – 1/2 teaspoon
  • Red chili powder – 1 teaspoon
  • Garlic paste –   7 cloves
  • Garam masala – 1 teaspoon
  • Black Pepper powder – 1 tsp

For Gravy

  • Onions – 2 Sliced
  • Small onions (Shallots) – 10 nos crushed
  • Tomato – 2 seeded and chopped
  • Salt to taste
  • Red chili powder – 1 teaspoon
  • Turmeric – 1/2 teaspoon
  • Black Pepper powder – 1 tsp
  • Thick Coconut milk – 1 cup
  • Cashew nuts – 1/2 cup
  • Raisins – 1/4 cup
  • Water – 1/4 cup
  • Coconut Oil – 3 tbsp
  • Whole dry red chill – 3 nos

You have to,

Step 1

  • Marinate mutton for 10 min with the ingredients mentioned under marination. 
  • Don’t add water during marination
  • Now add 1/4 cup water and pressure cook the mutton. 
  • 3 whistles should do. 
  • Remove from pan and allow the pressure goes

Step 2

  • In a heavy bottom pan heat oil in medium flame
  • Add cashew nuts.
  • Once the cashews turn light brown add in the  raisins
  • Saute for few seconds 
  • Add broken dry red chili stir fry.
  • Now drain and remove all from pan and keep aside.
  • In the same pan add onions and fry till golden brown
  • Add crushed onions(shallots) and saute well
  • Add chopped tomatoes.
  • Add the red chili powder, turmeric powder, garlic , cooked mutton, salt and fried cashews-raisan-chilli and mix well
  • Add coconut milk and cook in medium to low flame for 30 min. 
  • Add in pepper powder and stir boil for another 2 minutes. Remove from flame
  • Serve with appam or idiyappam or ghee rice or plain rice or roti

Notes:  
Make sure you never leave the mutton in water. Mutton needs to wash and drain immediately. If there is water, this recipe will have lot of gravy, where this is a semi gravy masala preparation.
