Ribbon Rice

This is a recipe I read sometime back in Nimmy Paul’s blog. There is a slight variation from the original recipe. I added whole garam masala spices while cooking rice and mint leaves in the chutney… This is a mild and delicious recipe. It is not a biryani

Ribbon rice is a layered rice delight… . It is all about assembling 3 dishes…And pretty easy to make…

For Rice layer

  • Long grain Basmati – 1 cup
  • Black pepper – 5
  • Cinnamon stick – 1 small piece
  • Cardamom – 1
  • Salt to taste

Prawns masala

  • Medium sized prawns – 12 to 15 pieces
  • Onion – 1 big finely chopped
  • Tomatoes – 2 finely chopped
  • Green chili – 2 slit
  • Garlic – 2 tbsp finely chopped
  • Ginger – 1 tbsp finely chopped
  • Chili powder –  1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Oil – 2 tbsp
  • Salt to taste

For Chutney

  • Freshly grated Coconut – 1/2 cup
  • Coriander leaves finely chopped – 1/2 cup
  • Mint leaves – 1/4 cup
  • garlic – 1 big clove
  • ginger – 1 tsp roughly chopped
  • shallots – 2 pieces skinned
  • lemon juice – 1 tbsp
  • salt to taste

You have to,

Step 1

  • Wash the rice without breaking the grains
  • Soak it for at least 30 minutes
  • Boil 6 cups of water with spices and salt
  • Add rice and cook
  • Once done strain in a colander.

Step 2

  • Heat oil in a pan and add cumin seeds. allow to pop
  • add onions and saute till translucent
  • add the green chili, ginger and garlic
  • Continue frying till the raw smell disappear and the onion caramelizes
  • add tomatoes and cook till oil separates. Now add prawns and saute well
  • Cook till it turns red (that is when the prawns are cooked
  • Add salt and stir fry for a while ans remove from flame

Step 3

  • Grind all the ingredients mentioned under chutney to a smooth paste. Don’t add water.

Assembling Rice

  • Take a big bowl
  • Divide Rice into 3 portions
  • Spread a bit ghee inside the bowl ( 2 drops of ghee should be more than enough)
  • Add first portion of white rice and spread evenly
  • Now add the prawns masala
  • Spread the 2nd portion of rice
  • Now the chutney layer
  • And finish with white rice….You are done
  • Now take the serving plate and upside down the bowl on the plate.
  • While serving slice vertically and serve
You don’t need a raita or pickle. Just grab a spoon and enjoy spoon full of this delicacy…
