Cauliflower and potatoes stir fry : Aloo Gobi

Donno how many times i have made this. It used to be in my lunch box or for my dinner. It is quite easy

You need,
Cauliflower florets – 2 cup
Potato peeled and cubed – 1 cup
Onion – 1/2 portion of a small onion, quartered and sliced
Tomato – 1 small chopped
Grated ginger – 1 tbsp
turmeric – 1/4 tsp
Red chili powder – 1 tsp
Green chili – 1 no sliced into 2
Cumin seeds – 1 tsp
Asafetida or Hing – a pinch
Refined Oil – 2 tbsp
Coriander leaves finely chopped – 2 tbsp
Water – 1/4 cup
Salt to taste


You have to,
1. Heat the oil in a pan/wok in medium flame.
2. Add the cumin seeds. It will crackle
3. Add hing followed by onion and green chilies
4. Fry till the onions turn translucent
5. Add red chili powder and turmeric. saute for few sec to remove the raw smell
6. Now add the potatoes, cauliflower and tomato. saute
7. Fry for 2 minutes and add water and reduce the flame to medium to low
8. Let it cook. It will take 15-20 minutes. (Please make sure you check the pan in every 2-3 minutes. Just to make sure that the water isnt dried up. If so add 3 tbsp more and continue cooking)
9. Now add salt as to taste and stir fry
10. Serve hot with Roti

Notes:
As a variation you can add 1/2 cup each of paneer and/or frozen green peas to replace with 1 cup cauliflower.
If green peas, add it along with potato.
If paneer, add 5 minutes before the whole cooking process is done(before adding salt)
