Three layer eggless chocolate mousse

I never knew it will be so easy to prepare a chocolate mousse. Recently I bought tiny tiny (2.5 oz) glasses. I thought of preparing the mousse in these tiny glasses and serve for my tea party. It was looking very cute. Sad that I couldn’t click the snaps of the tiny glasses. I made double the quantity of the recipe mentioned below. I could fill 12 nos of tiny glasses and 5 normal glasses (like picture shown below)

As the name mentions it is 3 layer mousse where the bottom layer i used bitter chocolate followed by white and milk chocolate. Each layer has to be prepared and set. Later the next layer is prepared and added over the previous one. You can prepare in order you like.

Ingredients
Bittersweet Chocolate Mousse
Bittersweet Chocolate – 4 oz, chopped
unsalted butter – 1/2 tsp
unflavored Gelatin Powder – 1/4 tsp
Milk – 1/4 cup
Whipping Cream – 3/4 cup

White Chocolate Mousse
White Chocolate – 4 oz, chopped
unsalted butter – 1/2 tsp
unflavored Gelatin Powder – 1/4 tsp
Milk – 1/4 cup
Whipping Cream – 3/4 cup

Milk Chocolate Mousse
Milk Chocolate – 4 oz, chopped
unsalted butter – 1/2 tsp
unflavored Gelatin Powder – 1/4 tsp
Milk – 1/4 cup
Whipping Cream – 3/4 cup

Method

All the 3 mousse is prepared using the same steps. First we will prepare bitter(dark) chocolate layer

1. Set a double boiler
2. Place a vessel of half filled water on the stove and bring to boil in medium to low temperature.
3. Keep a heat proof bowl on top of it.
4. Add the chocolate pieces and butter.
5. Stir occasionally. Allow to melt to a smooth sauce.
6. While the chocolate is melting we can whip the cream to soft peaks and keep aside.
7. Stir gelatin powder into milk and let sit for a minute. Heat milk to just below a simmer and then whisk into melted chocolate.
8. Once the chocolate is cool to room temperature.
9. Fold in the whipped cream to the chocolate.
10. Pour the mousse to a desired base or glasses
11. Refrigerate for an hour.

Now the first layer is set.

For the white chocolate layer,
1. Repeat the same steps from 1 to 9 for the white chocolate.
2. Pour this gently over the bitter chocolate layer and set for another one hour

For milk chocolate layer
1. Repeat the same steps of the bitter chocolate mousse from step 1 to 9 for the milk chocolate.
2. Pour this gently over the white chocolate layer and set for another one hour

Now chill the whole mousse for at least 4 hours before serving. softy smoothy mousse.. ๐Ÿ™‚

Tip:- You can add some whipped cream and top it with raspberry. ๐Ÿ™‚
