Bermi paratha

August 28, 2011 By Manjooo M Leave a Comment

After a lot of google I got to know this paratha is the staple food in Rajasthan, India.

For the dough
whole wheat flour – 1 cup
ghee/oil – 1 tsp
salt to taste

For stuffing
Yellow moong dal – 3 tbsp soaked for 3 hours
spring onions with greens – 1/4 cup , finely chopped(I used 1 small onion)
chilli powder – 1 tsp
cumin seeds powder – 1 tsp
asafoetida – 1 pinch
salt to taste

Other ingredients
ghee or oil for cooking

You have to
1.Combine all the ingredients for dough and knead into a soft dough using enough water. Leave it closed for 30 minutes.
2.Divide the dough into 8 equal portions. Keep aside.
3. Combine all the ingredients for stuffing in a bowl.
4. Now Roll out each portion of the dough into a small circle.
2. Place 1/8 portion of the stuffing mixture in the centre of the circle.
3. Bring together all the sides in the centre and seal tightly.
4. Roll out again into a circle slowly, using flour to roll the paratha.
5. Cook on a hot griddle or tawa, using a little oil, until both sides are golden brown.
6. Repeat with the remaining dough and stuffing to make 7 more parathas.
7. Serve hot.
