Paneer Bhurji | Paneer Bhujiya | Stir fried Indian Cottage Cheese

I was never introduced to paneer or the Indian cottage cheese till my college days. Paneer is mostly used in north Indian dishes. And it wasn’t available in any shops near my home. I used to hear about panner when my cousins come down from Mumbai. They used to tell me about the different recipes made out of it. In that, what brought my attention was paneer bhurji. I just knew about the egg bhurji which my mom prepares. Now a days paneer is available in all most all the shops in our city.  
When i came to Bangalore things changed. I was exposed to lot many cuisines. I was staying my with pg mates who were from different parts of India. And I used to love being with them when they prepare any dish. They too had the same excitement and curiousness when I prepare a Sambar or Aviyal.
So let me share the simple recipe of paneer bhurji which i prepare at home. 

You need,
1. Indian Cottage Cheese / Paneer crumbled – 200 gm
2. Onions – 1 big chopped
3. Tomato – 2 medium seeded and chopped
4. Hing – 1 pinch
5. Red Chili Powder – 1-2 teaspoon(If you like it spicy let it be 2 teaspoons)
6. Turmeric – 1/2 teaspoon
7. Coriander leaves – 1/4 cup chopped
8. Salt – to taste
9. Refined/Sunflower Oil – 2 tbsp

You have to,
1. Heat oil in a pan/wok.
2. Add hing followed by onion.
3. Once it turns translucent add Tomatoes and fry till the tomatoes turn mushy
4. Add the red chili powder and turmeric and mix well
5. Add paneer, sprinkle salt and toss
6. Close the pan/wok with lid and steam for a just minute or 2.
7. Remove from fire and add coriander leaves.
8. Serve with chappathi/roti.

Notes:
1. You can add half cup finely chopped capsicum along with tomatoes (step 3). It brings a nice flavor
2. You can sandwich this bhurji with bread. It tastes great
3. You could even make paneer rolls with chappathi.
