shrikhand, fresh fruit and granita

As the name says, this recipe has only Shrikhand, Fresh fruits and Granita. The flexibility of this recipe is we could choose the fillings and flavors as we like…

I keep making the vanilla version of shrikhand. For the recipe click here . The cardamom version is very equally delicious.

For Cardamom Shrikhand
You need,

You need,
  • Yogurt – 1 cup
  • Sugar – 2 tbsp
  • Green cardamom – 1

You have to
  • Grind sugar and green cardamom to a fine powder.
  • Now strain the yogurt in a colander. Leave it till we are going to use it for this recipe (at least 30 minutes it should stay in a colander)
  • Transfer the hung curd to a bowl and add in sugar and cardamom powder
  • Whisk just to to blend well
  • Transfer it to serving glasses and close with a lid and refrigerate till ready to serve
For Strawberry granita

You need,
  • Fresh or frozen Strawberries – 1 cup
  • Sugar – 1/4 cup
  • freshly lemon juice  – 1 tsp

You have to
  • Blend all the ingredients until smooth
  • Pour this mixture to a long glass bowl
  • Freeze for 30 minutes
  • Using a fork scrape the ice.
  • Transfer the pan to freezer and continue freezing
  • Do this every 30 minutes for another 4 times
  • By now it will be like red ice crystals.
  • Now transfer this to a deep bowl and close with a lid
  • Keep frozen till ready to serve

Fruit filling

You need
  • Fresh Mango cut into small cubes – 1 cup
  • Mint leaves – 4 nos, sliced thinly.

You have to 
  • Toss the mango and mint leave in a bowl
  • Chill till ready to serve.

Final part.
To serve,
  • Divide shrikhand between 2 glasses
  • Spoon the fresh mangoes
  • Top with strawberry granita.

You could make all these components well ahead and serve as and when required
