I keep making the vanilla version of shrikhand. For the recipe click here . The cardamom version is very equally delicious.
For Cardamom Shrikhand
You need,

- Yogurt – 1 cup
- Sugar – 2 tbsp
- Green cardamom – 1
You have to
- Grind sugar and green cardamom to a fine powder.
- Now strain the yogurt in a colander. Leave it till we are going to use it for this recipe (at least 30 minutes it should stay in a colander)
- Transfer the hung curd to a bowl and add in sugar and cardamom powder
- Whisk just to to blend well
- Transfer it to serving glasses and close with a lid and refrigerate till ready to serve
For Strawberry granita
You need,
- Fresh or frozen Strawberries – 1 cup
- Sugar – 1/4 cup
- freshly lemon juice – 1 tsp
You have to
- Blend all the ingredients until smooth
- Pour this mixture to a long glass bowl
- Freeze for 30 minutes
- Using a fork scrape the ice.
- Transfer the pan to freezer and continue freezing
- Do this every 30 minutes for another 4 times
- By now it will be like red ice crystals.
- Now transfer this to a deep bowl and close with a lid
- Keep frozen till ready to serve
Fruit filling
You need
- Fresh Mango cut into small cubes – 1 cup
- Mint leaves – 4 nos, sliced thinly.
You have to
- Toss the mango and mint leave in a bowl
- Chill till ready to serve.
Final part.
To serve,
- Divide shrikhand between 2 glasses
- Spoon the fresh mangoes
- Top with strawberry granita.
You could make all these components well ahead and serve as and when required
