Dry fruits soaked in rum for Traditional Christmas Fruit Cake

December 22, 2012 By Manjooo M Leave a Comment

For Traditional fruit cakes it is always best to soak the dried fruits a month in advance. We do prepare fruit cake without alcohol(Check here). This time I thought of trying this version and soaked the dried fruits 3 weeks in advance

You need
Almonds – 100 gms chopped
Walnuts – 100 gms chopped
Pecans – 100 gms chopped
Raisins – 100 gms chopped
Dried Plums – 100 gms chopped
Dried figs – 100 gms chopped
Dates – 100 gms chopped
Ginger peel – 100 gms chopped (You can replace or add Orange peel)
Red cherries(candied) – 100 gms chopped

Basically you can use any dried fruits you like

To soak
Rum – 150 ml
cinnamon powder – 1 tbsp

You need,
1. Mix dried fruit soak them in rum and cinnamon powder.

2. Put this mixture into an airtight container and keep it in cool dry place in your kitchen(Don’t refrigerate)
3. You need to mix it every day. Shake the jar. It needs to be soaked at least 1-2 days(Mine is in the jar for the past 3 weeks).
4. You can use this for baking the your Traditional Christmas Fruit Cake.

I did my first batch of baking last evening. It turned out too good. I will share the recipe tomorrow.

Note: As I have to bake more cakes I have soaked the above quantity. You can use 1/4 of the mentioned measurement for a one time use.
