You need,
Mango – 3 Large seeded and chopped into small even pieces (it forms approx 5-6 cups)
Mustard – 3 tsp
Ginger – 3 tbsp gratted
Garlic – 3 tbsp gratted
Curry leaves of 3 sprigs
Fenugreek – 3/4 tsp
Asafoetida -1/2 tsp
Salt to taste
Turmeric Powder – 1/2 tsp
Chili Powder – 6 tbsp
Gingely oil- 6 tbsp
Vinegar – 1/2 cup
You have to,
1. Heat oil in a pan. Add mustard and allow to pop up
2. When they pop up add fenugreek seeds and fry for few seconds.
3. Add curry leaves, ginger-garlic, chili powder, turmeric, salt and then the powders sauting them after each addition
4. Add Asafoetida, vinegar and mango pieces and remove the pan from fire
5. Mix well and leave it in pan to cool down completely
6. Transfer that to a glass jar and close tightly with a lid.
