It is quiet simple recipe.
You need,
1. refined oil – 3 tbsp
2. onions – 1 big sliced thinly
3. Button mushrooms – 1 and 1/2 cups or 12-15 nos cut into 4 pieces
4. salt to taste
5. turmeric powder – 1/2 tsp
6. chilli powder – 1 tsp
7. corriander powder – 1 tsp or freshly pounded corriander seeds – 1 tbsp
8. dried fenugreek leaves / methi leaves – 2 tbsp
9. Raw basmati rice – 1 cup
10. Hot water – 2 cup
You have to,
1. Wash and soak the basmati rice. Make sure not to break the long grains
2. Heat the oil in a deep non-stick pan in medium flame, add the onions and saute till it turns translucent.
3. Add the mushrooms, fenugreek leaves and saute for 3 minutes.
4. Add in the salt, turmeric, chilli powder,corriander powder
5. Add Rice and saute very carefully without breaking the grains.
6. Now add 2 cups of hot water. close the pan with a lid and allow to cook in low to medium flame till it is done. (It should take 10-15 minutes)
7. Serve hot 🙂
Note: – For The Garnish you could use grated paneer (cottage cheese) or chopped corriander leaves
