Most of the people prepare bhurji in different style. Lemme share this recipe
You need,
1. Raw Eggs – 4
2. Onion – 1 medium sized chopped
3. Tomatoes – 2 medium seeded and chopped
4. Turmeric powder – 1/4 tsp
5. Red chili powder – 1/2 tsp
6. Green chilies 2 – chopped
7. Red chilly – 1
8. Salt to taste
9. Oil – 2 tbsp
10. Curry leaves of one string
11. Mustard seeds – 1 tsp
12. Ginger – 2 tbsp chopped
You have to,
1. Beat eggs and necessary salt in a bowl till fluffy and keep aside.
2. Heat oil in a non stick pan in a medium flame. Add broken dry red chili, mustard and allow to pop.
3. Add onions, curry leaves and ginger and use wooden spoon and saute till onion turn translucent.
4. Add tomato and fry well till all the water absorbs.
5. Now add turmeric , red chili powder and a pinch of salt.
6. Then add beaten egg and scramble well till it separate into small pieces.
7. Server with chapatti or bread
Note: After step 6, you could add 1/4 cup of fresh grated coconut.
