Vegetable Omelet

I love making this omelet. Reason is simple, it has a lot of veggies inside… Lazy mornings I end up making this

You need
Eggs – 6 egg whites
Onion – 1 small or 1 Spring Onion, finely chopped
Carrots – 3 tbsp, grated
Beans – 1 finely sliced
Capsicum – 3 tbsp, grated
Green chilly – 1, chopped
Salt & crushed pepper – to taste
Oil – 2 tbsp

You have to,
1. Beat the eggs & salt together
2. Heat oil in a deep frying non stick pan.
3. Pour in the egg batter
4. Sprinkle all the vegetables and pepper
5. Cover and cook in low flame for 1-2 min
6. Once one side is cooked, very carefully flip the omelet and cook the another side
7. Server hot. You can have it as your breakfast or dinner. 🙂
