For Paneer Stuffing you need,
1 cup gratted paneer finely
1 green chilli chopped finely
2 tbsp of chopped corriander leaves
1 tbsp ginger gratted
Salt
You should
Mix all the above ingrediants. You can make 3-4 parathas with this.
The size of the dough and the stuffing should be almost same size.
For Gobi stuffing you need,
1 cup finely gratted cauliflower
1 green chilli chopped finely
1 tsp corriander powder
1 tbsp gratted ginger
2 tbsp corriander leaves
1 tbsp Oil
Salt
You should
1. Heat oil in a pan.
2. Add ginger and green chilli.
3. Add remaining ingrediants and mix well
4. fry for 2-3 minutes and remove from fire
5. Allow to cool and use the stuffing
Note:-
You can even use gratted cabbage for the above stuffing. Or a combination of cauliflower and cabbage
For Potato stuffing
1 cup boiled and mashed potatoes
2 tsp ginger-green chilli chopped very finely
1 tsp coriander (dhania) powder
2 tbsp oil
salt to taste
You should,
1. Heat oil
2. Add all ingrediants except potato.
4. Saute for 2 min then add Potato remove from fire.
5. Allow to cool and use the stuffing
Note:-
1. For Methi Aloo Paratha, you can add 1 cup finely chopped fenugreek (methi) leaves when you fry the masalas.
2. To bring a different taste you can add 1 tsp of chat masala
