A quick stir fry rice which can be a great lunch when you are going a long journey. I have once made this for my mom when she came down to visit me.. In Karnataka it is known as Chitranna
Actually if you have it once, you could easily prepare it at home. No special recipe. What ever you see is there in the recipe. And the lemony taste you could make out when you eat the a spoon of rice
You need,
- Cooked white rice – 3 cup (You can use left over rice as well)
- Coconut Oil – 3 tbsp (You can replace with refined oil)
- Chana Dal – 1 tbsp
- Peanuts – 1/4 cup (dry roasted in a pan in case you are using raw)
- Mustard Seeds – 1 tsp
- Urad Dal – 1 tsp
- Red chilies – 4
- Green chilies – 2 slit
- Asafoetida – One pinch
- Turmeric powder -1/2 tsp
- Curry leaves of 2 springs
- Freshly squeezed Lemon juice – 3 tbsp
- Salt – to taste
- Coriander leaves, finely chopped – 2 tbsp
You have to,
- Heat oil in a pan
- Add chana dal and peanuts roast for a while
- Now add urad dal and mustard seeds.
- Once the mustard pops up
- Add asafoetida, red chilies, green chilies and curry leaves
- Add turmeric, rice, salt and lemon juice.
- Toss well without breaking the grains
- Serve hot garnished with coriander leaves
