Thoran (A kind of vegetable stir fry) is a one of the staple food in Kerala. At our home my mom prepares thoran or a mezhukkuperatti along with a Sambar or Pulishery or Parippu curry or errishery. And a non veg dish. Most of the days mom prepares fish curry
My mom has a vegetable garden at home. And most of the vegetables comes from there. Ivy gourd is one among them. I always feel this is a tiny version of a cucumber. I have seen my mom munching the raw ivy gourds while we plucking them. It is crunchy and tasty
Feeling nostalgic.
Let me share the recipe of an easy version of Thoran. The regular recipe which my mom prepares is here
You need
- Ivy Gourd, quartered and chopped into small cubes – 3 cups
- Onion – 1 medium sized finely chopped
- Green chilies – 2 finely chopped
- Turmeric – 1/4 tsp
- Curry leaves of 2 spring
- Mustard seeds – 1 tsp
- Salt to taste
- Coconut freshly grated – 1 cup
- Coconut oil – 1 tbsp
- Water – 1/4 cup
- Cumin powder – 1/2 tsp
You have to,
- Heat oil in a pan in medium flame
- Add mustard seeds and allow to pop
- Add curry leaves, turmeric, ivy gourds, chilies and onion. Saute well
- Add water and mix
- Close and cook for 10 minutes or till the water dries up
- Add salt and cumin powder
- Finish of by adding coconut and remove from flame
- Serve with rice or roti
